  1. Place chicken in the Instant Pot.
  2. Combine the rest of the ingredients except the corn starch and water and pour it over the chicken.
  3. Start the Instant Pot cycle.
  4. When cycle is done, release the pressure and remove chicken.
  5. Put the saute cycle on and bring sauce to a boil.
  6. Combine arrowroot and water and pour into boiling sauce to thicken.
  7. Once thickened, put chicken back in and cover with sauce.
  8. Serve over cauliflower rice.
